As fans of haggis we’re always looking for new and interesting ways to enjoy it around Burns night in January. As such, we’ve tried a few haggis recipes but these haggis nachos have remained a firm favourite.
The recipe below can be tweaked to your liking and all weights are approximate. The smoky refried beans really add something to this dish but can be omitted if you’re not a fan.

175g packet plain tortilla chips
200g refried beans
100g sour cream
A few drops of liquid smoke
Jalapeno chillies (as many as you like), drained, sliced
200g/7oz mature cheddar cheese, grated (or a cheese sauce if preferred)
2 Fresh limes
small handful chopped fresh coriander leaves
Step 1: Heat the haggis in the microwave according to the instructions on the pack.
Step 2: Heat the refried beans in a saucepan and throw in a few drops of liquid smoke.
Step 3: Spoon the hot haggis over the tortilla chips, do the same with the refried beans and sprinkle over the cheese, put under a grill to melt the cheese.
Step 4: Dollop spoonfuls of guacamole, salsa and sour cream on top and add a few jalapeño peppers or fresh chillies if desired.
Step 5: Scatter with coriander and serve with some lime wedges on the side.Find Flavour Seeker on social media:
